VNC Very Slow on Headless Ubuntu MATE Until Monitor Connected, Then Speeds Up

I am having almost exactly the same issue running RealVNC on a headless system as mentioned in this post from earlier this year. I however am running Ubuntu MATE 20.04.1 LTS so the solution did not work for my installation or I couldn’t figure it out.

Is there a similar fix for the MATE desktop?
